Potato Patties
An awesome weekend brunch for the whole family!
For four servings you’ll need
- 5 medium potatoes (1 lb), peeled and boiled
- 12 oz (454 g)canned ham, or luncheon meat, finely chopped
- 1 medium onion, peeled and finely chopped
- 1 egg, beaten
- 1/8 tsp pepper
Preparation
- Mash the potatoes thoroughly
- Mix in the meat and onion
- Add egg and pepper
- Assess mixture — see Tips below
- Divide mixture into 16 equal portions
- Form each portion into 2 inch diameter patties on a floured board
- Fry in shallow vegetable oil on both sides until golden brown
Tips
- If mixture is lean and dry, mix in a couple of teaspoons of butter or add an extra half egg. If mixture is too moist, mix in a few tablespoons of dry bread crumbs or oatmeal. A nice balance is required to make sure it forms into patties well.
Good served with
- Mixed vegetables and sliced tomatoes.
