Potato Patties

An awesome weekend brunch for the whole family!

Potato Patties

For four servings you’ll need

  • 5 medium potatoes (1 lb), peeled and boiled
  • 12 oz (454 g)canned ham, or luncheon meat, finely chopped
  • 1 medium onion, peeled and finely chopped
  • 1 egg, beaten
  • 1/8 tsp pepper

Preparation

  • Mash the potatoes thoroughly
  • Mix in the meat and onion
  • Add egg and pepper
  • Assess mixture — see Tips below
  • Divide mixture into 16 equal portions
  • Form each portion into 2 inch diameter patties on a floured board
  • Fry in shallow vegetable oil on both sides until golden brown

Tips

  • If mixture is lean and dry, mix in a couple of teaspoons of butter or add an extra half egg. If mixture is too moist, mix in a few tablespoons of dry bread crumbs or oatmeal. A nice balance is required to make sure it forms into patties well.

Good served with

  • Mixed vegetables and sliced tomatoes.
