Potatoes O’Bryan
Here is a quick and easy way to use up leftover whole potatoes.
For four servings you’ll need
- 4 large cooked potatoes (whole)
- 2 or 3 slices of bacon (diced)
- 1 small onion (diced)
- half of one green pepper (diced)
- salt/pepper to taste
Preparation
- In large pan, fry bacon until crisp, drain, reserving 1 Tbsp of fat.
- Return fat to pan, brown onion lightly, add cubed potatoes and green pepper.
- Continue cooking over medium heat until potatoes are nicely browned and vegetables are cooked.
- Add salt and pepper to taste.
- Serve hot.
Tips
- Potatoes are best cooked whole then cubed to keep them from getting mushy.
- Be sure not to overcook.

- Most breakfast items, especially eggs done any style.
