Potatoes O’Bryan

Here is a quick and easy way to use up leftover whole potatoes.

For four servings you’ll need

  • 4 large cooked potatoes (whole)
  • 2 or 3 slices of bacon (diced)
  • 1 small onion (diced)
  • half of one green pepper (diced)
  • salt/pepper to taste

Preparation

  • In large pan, fry bacon until crisp, drain, reserving 1 Tbsp of fat.
  • Return fat to pan, brown onion lightly, add cubed potatoes and green pepper.
  • Continue cooking over medium heat until potatoes are nicely browned and vegetables are cooked.
  • Add salt and pepper to taste.
  • Serve hot.

Tips

  • Potatoes are best cooked whole then cubed to keep them from getting mushy.
  • Be sure not to overcook.

Good served with

  • Most breakfast items, especially eggs done any style.
