Mashed Potatoes with a Twist
Mashed potatoes are a great sidekick to any hearty dinner — why not spruce it up with vegetables to add variety!
For six to eight servings you’ll need
- 6 medium potatoes, peeled and cut in quarters
- 6 medium carrots, peeled and cut in quarters
- 2 medium onions, skinned and cut in quarters
- 3/4 c hot milk
- 1/4 c finely chopped fresh parsley
- 1/4 c butter
- salt and pepper to taste
Preparation
- Cook potatoes, carrots and onion in medium sized pot for about 20 minutes.
- Drain and return pot to heat.
- Mash until smooth.
- Blend in milk, parsley, butter, salt and pepper.
Tips
- For other vegetable twists, try parsnips or cabbage

- Any roast dish.
