Mashed Potatoes with a Twist

Mashed potatoes are a great sidekick to any hearty dinner — why not spruce it up with vegetables to add variety!

Mashed Potatoes with a Twist

For six to eight servings you’ll need

  • 6 medium potatoes, peeled and cut in quarters
  • 6 medium carrots, peeled and cut in quarters
  • 2 medium onions, skinned and cut in quarters
  • 3/4 c hot milk
  • 1/4 c finely chopped fresh parsley
  • 1/4 c butter
  • salt and pepper to taste

Preparation

  • Cook potatoes, carrots and onion in medium sized pot for about 20 minutes.
  • Drain and return pot to heat.
  • Mash until smooth.
  • Blend in milk, parsley, butter, salt and pepper.

Tips

  • For other vegetable twists, try parsnips or cabbage

Good served with

  • Any roast dish.
