Potato Spice Cake

Use up leftover mashed potatoes to make this tasty delight — so simple to make that the kids could join in!

Potato Spice Cake

You’ll need

  • 2 c all-purpose flour
  • 1 ½ c sugar
  • ½ c cocoa
  • 3 tsp baking powder
  • 3/4 tsp salt
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • 3/4 c shortening
  • ½ c milk
  • 1 c cold mashed potatoes
  • 3 eggs
  • 2 tsp vanilla
  • 1 tsp lemon juice
  • ½ c raisins
  • ½ c chopped walnuts

Preparation

  • In large mixing bowl, mix together first 9 ingredients
  • Cut shortening into flour mixture until crumbly
  • Add milk, mashed potatoes, eggs, vanilla and lemon juice, beat until smooth
  • Mix in raisins and walnuts
  • Pour into large, well-greased angel cake pan
  • Bake at 350-degrees Fahrenheit for 70 minutes
  • Cool 10 minutes and remove from pan

Tips

  • If using smaller cake pans, you won’t need 70 minutes cooking time. Bake just until a knife inserted in the centre comes out clean. Sprinkle with icing sugar.
