Potato Spice Cake
Use up leftover mashed potatoes to make this tasty delight — so simple to make that the kids could join in!
You’ll need
- 2 c all-purpose flour
- 1 ½ c sugar
- ½ c cocoa
- 3 tsp baking powder
- 3/4 tsp salt
- 1/4 tsp cloves
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1/4 tsp allspice
- 3/4 c shortening
- ½ c milk
- 1 c cold mashed potatoes
- 3 eggs
- 2 tsp vanilla
- 1 tsp lemon juice
- ½ c raisins
- ½ c chopped walnuts
Preparation
- In large mixing bowl, mix together first 9 ingredients
- Cut shortening into flour mixture until crumbly
- Add milk, mashed potatoes, eggs, vanilla and lemon juice, beat until smooth
- Mix in raisins and walnuts
- Pour into large, well-greased angel cake pan
- Bake at 350-degrees Fahrenheit for 70 minutes
- Cool 10 minutes and remove from pan
Tips
- If using smaller cake pans, you won’t need 70 minutes cooking time. Bake just until a knife inserted in the centre comes out clean. Sprinkle with icing sugar.
